WHY DO MOST RECIPES CALL FOR ROOM TEMPERATURE EGGS?

Many recipes, from cheesecakes to cookies, require room temperature eggs. This is because adding a room temperature egg to a batter with cream will not cause the mixture to cool down, clump up, or separate. Instead, it will easily incorporate with the other ingredients without changing the composition or overtaxing the mixture. 

Although remembering to use room temperature eggs seems simple, it is often overlooked. When you realize your eggs are still cold from the fridge, place them in a cup of warm water for a few seconds. This will quickly bring the eggs to room temperature, allowing you to continue with your recipe without delay.
