From my experience working at a Michelin Star restaurant, here is the easy trick to serve spot free.

This simple trick will leave your guests focusing entirely on the food, not the plate — just as it should be! Its easy! All you need are lint-free napkins or cloths lightly soaked in a mixture of mostly water with a splash of vinegar. Make sure the napkins are damp, but not dripping. You can achieve this by gently wringing them out or spraying the cloths with the mixture from a spray bottle until they are adequately saturated. When I worked as a pastry cook at Gucci Osteria, a designated server would prepare the napkins for each station and place them in a container for easy access. This was a lifesaver during the hustle and bustle of sending out orders.
